“Young, star-crossed lovers from small-town Wisconsin start a family, start a brewing supply store, and start the 2nd-fastest growing brewery in the state.” I’d watch that movie. It’s doubtful Wollywood (Wisconsin’s Hollywood, trademark pending) will take an interest in my half-brained film ideas, but at least I experienced the fruits of that real-world story at O’so Brewing Company in Plover.

Brewing since 2007, the O’so taproom is well-stocked with 40+ beers, 23 of which were their own creations the day we visited. That’s just an astounding output.

“We like sours.”

With no hesitation, our bartender explained how sour beers have become a large part of their rotation.  Still somewhat of a rarity in production breweries, it’s a testament to how clean of an operation they must be running (sour yeast is a notorious little bugger).

The Big O Wheat Ale
Very light, touch of honey.

Winds of Change Sour Pale Ale
Eye-opening; a tart, lingering fruit.

Hopdinger Pale Ale
A definite flagship IPA.

Hibiscus Saison
Juicy, clean, satisfying.

Prickly Pear Sour Ale
Sour & pear, no doubt. Pucker up.

Project LO Sour Blonde
Sour standards. Like a sour juice.

Nitro Hop Whoopin’ IPA
Smooth with heavy hop taste but zero bite.

Dominator Dopplebock
Malty, nutty, lingering woody tinges.

Nitro Rusty Red
Settle into a wonderful, warm night in your favorite chair with this beer.

Sweet Lady Porter
Just a smooth-drinking porter.

The diversity in beers took us on quite a ride through our samplers. Recommended you bring a friend (or 3) to try as many as possible.

We also loved that O’so will supply you with a free postcard to send beer-soaked greetings to your loved ones, because that’s just the kind of family-focused Wisconsin thing you’d expect from this place.

Small town, big growth, and oh-so-bold flavors are hallmarks of O’so Brewing Company. And that sour taste in your mouth is a good thing.
